This is a very tasty salad dressing that I discovered because I was being “thrifty”. When I make pizza sauce, I start with organic strained tomatoes in glass. After emptying the jar there is still a lot of tomato in there! Make some pizza sauce and then try this salad dressing with what is left in the jar.
Makes 3/4 cup dressing.
1 emptied (but not rinsed out!) jar of strained tomatoes
1/4 cup balsamic vinegar
1/2 cup extra virgin olive oil
2 tsp. maple syrup
salt and black pepper to taste
Add the vinegar to the tomato jar, cap it, and shake well to clean the sides of the jar with the vinegar. Pour the vinegar-tomato mixture into a glass 8 oz jar with a wide mouth. Add the olive oil and maple syrup to the mixture and then cap and shake the jar. Add salt and pepper to taste. Be generous dressing your salad–2 Tbsp. per salad.
