Avocado Smoothie

We had an avocado smoothie at a natural foods co-op in Seattle and found it to be surprisingly delicious.  If you like avocado, give this a try and let me know what you think!  You will need a juicer and a blender.  If you prefer it sweeter either juice 2 apples or add a little stevia.

Serves 2

1 avocado

juice of 1 organic cucumber

juice of 1 organic apple

1 Tbsp. lime or lemon juice

pinch of sea salt

Cut the avocado in half and remove the pit.  Spoon the avocado into the blender container.  Juice the cucumber and the apple with an electric juicer.  Pour the juice into the blender container.  Add pinch of salt and lime juice.  Blend thoroughly. Pour 1/2 of the mixture into each of two glasses.   Serve immediately.
